Studies have proven that breakfast is the most important meal of the day and it leads to increased concentration at work and school.

All through out my school years, my mother “forced” us to eat breakfast – toast or Indian breads or eggs, with a glass of milk and an apple. After I left home for college, I skipped breakfast 95% of the time and ended up gaining 15-20 lbs (for my “almost” 5ft stature that number was quite significant!).  In the last 8 years, I have been working out regularly (3x/week). I have been eating breakfast religiously consisting of toast with almond or peanut butter or oatmeal with fruits with a cup of tea. Despite being in my (almost) mid-thirties, I have more energy than ever before and I weigh 15-20 lbs less than my early twenties.  Here is my go to oatmeal recipe. No need to start it the night before or slave over the stove. This oatmeal is quick to make; it is healthy, nutritious, creamy and yummy!

QUICK TIP: I mix in all the dry ingredients and store the mixture in an airtight container. I just take out a cup of this mixture and throw it in the bowl every morning rather than measuring out ingredients each time. Note: You don’t need to follow the measurements precisely. This is oatmeal, not rocket science. Just put whatever your heart desires – different nuts, fruits, mix in almond butter or peanut butter for more creaminess.

Ingredients
  • 1/2 cup of rolled oats
  • 1/8 cup of steel cut oats (for texture/optional)
  • 1/2 cup milk (regular/coconut/almond/soy etc)
  • 1-2TB Walnuts or almonds
  • 2 tsp chia seeds (optional)
  • 1 TB toasted coconut flakes
  • 1 banana and handful of strawberries or any other berries
Instructions
  1. Combine all the dry ingredients (except berries and banana) in a microwave safe bowl with 1/2 cup of water.
  2. Put in microwave for 1 minute. Take it out and put half a banana and nicely smash it and mix well in the oatmeal.
  3. Put 1/2 cup of milk and put it back in the microwave for another minute. Take it out and mix it well again.
  4. Add more milk, if needed (if its too dry). Put it back in the microwave again for 30 seconds.
  5. Top with berries and the remaining banana.
  6. Add crushed nuts on top and drizzle with honey! Enjoy!
